Making of Daulat ki chaat
The procedure demands patience. The established makers have been making it for the past 100 years. The whole family runs the business. Firstly the father, secondly, the son then, the grandson takes over the business. The making of this delicacy is what they inherit.
A generous amount of milk and cream are kept open at night for 2-3 hours. It is believed that the dewdrops on the winter nights make the magic happen. Then, it is kept on ice slabs and whisked all night till it gets frothy. At last, it is flavored with saffron.
Serving of Daulat ki chaat
This magical foam is decorated with silver leaves and rose petals. When it’s time to serve this, a good amount is heaped on a plate, powdered sugar is sprinkled on top with some coconut and dry fruits.
